1. Mix all ingredients into large pot (except for beef and 1/3 tablespoon of oregano). Bring the base chili to a boil and turn down heat to a simmer. Let cook uncovered for 2 to 3 hours.
2. After 1 1/2 hours - cook the beef with the 1/3 tablespoon of oregano (can be chopped steak or hamburger - your choice.). Drain when done and add to the base chili.
3. Let the chili cook for an additional 1/2 hour to 1 1/2 hours. The more time that the chili is cooking the thicker it becomes.
